Two Ingredient Pancakes

A while ago my friend Iain recommended these healthy pancakes and, well, they're pretty damn good. I've started slimming world and these pancakes have been life savers - 5 syns per mashed banana and - slimming world aside - really quick and simple to make.

For a start there's two ingredients - bananas and eggs (and whatever you want to cook them in) and you want 2 eggs to 1 banana. You take them and mash them up together or, if you're really lazy like me, chuck them in a blender and turn a button.


If you whizz them up in the blender wait a while for the air to subside, I find the less forty the mix the better the pancakes...

Then press on with actually cooking them, I use a frying pan and switch up between coconut oil and fry-light. I used coconut oil all the time when first starting to make them but since signing up to the Slimming World Cult I've switched to their most hailed product - the one they have a shrine to somewhere in HQ I'm sure - FryLight.

Spread the mixture so it evenly covers the frying pan but without begin too thick.


Fry for about 3 minutes on one side them flip  over for about 2 et voila!

And there we have it - The Two Ingredient Pancake / The Slimming World Friendly Pancake / The Just A Much Healthier Alternative To Normal Pancakes Pancake. Whichever name you like...


I top them with fruit - bananas here but sometimes strawberries and agave nectar - I use the one from The Groovy Food Company and it's 1/2 a syn per teaspoon for any fellow Slimming World followers out there.

As for Iain's top tip...

I don't like blueberries and I don't like nuts, but if you do - he usually knows what he's talking about. When it comes to food, at least.

  5. If you cook or mash up fruit then you need to syn it so this is not free
